What I thought I was getting: a book full of delicious healthy recipes to make in an Instant Pot. What I got: a book with recipes no one in my family will eat. Plus, many of these "recipes" are a waste of paper. I do not need a "recipe" for boiled eggs.Here is my take on this recipe book, that I erroneously thought was for Instant Pot recipes only (it isn't, it has salads and some recipes for the oven, too):- The book was an immediate disappointment, before I even read 1 recipe. Like serious, I opened it up to the chapter "kitchen aids and pantry" and sighed. She wants you to have a kitchen FULL of expensive gadgets: high powered blender, immersion blender, food processor, citrus juicer and spiralizer. My kitchen is small. Plus, I thought one of the purposes of the instant pot was to reduce how much time and cleaning I did.- You will not have the same results as the author. The author lost that much weight because she found out she had hypothyroid disease and then she found out she had a gene mutation, MTHFR. She treated it; and changed her entire diet from top to bottom to avoid folic acid. Her getting treatments for her thyroid and avoiding foods that her body can't handle because of the mutation is a BIG part of her weight loss. She lost 10 lbs in her first week alone of avoiding folic acid.- Her child has health issues so she HAD to make drastic changes. That's a motivation you and I aren't going to have (hopefully!). And how many of you have a family ready to make a drastic change with you if what you are cooking isn't delicious? Her husband already ate healthy, so she was never doing this alone uphill. My husband is a sugar junkie that will ask me 10 times to try his candy.- She wants us to do as she does and she has a very restricted diet. She avoids sugar (yes, no chocolate at all), gluten, dairy, artificial sweeteners, food dyes, soy and certain food preservatives. She limits grains and fruit. She has one dessert a week, that she makes (with alternative flours and fruit). She eats organic and a ton of veggies. She drinks the recommended amount of water every day. She gets 8 hours of sleep every night. That isn't realistic for most of us. If we could do HALF of that we'd probably be able to control what and how much we eat.- Her ingredients lists are full of ingredients you won't have in your pantry if you are an average American. Very frequently it calls for alternative flours and stuff like "almond pulp, leftover from homemade almond milk" and "grass-fed beef unflavored gelatin". So either I'm going to the store or skipping a lot of recipes (cause I aint making almond milk anytime soon). I don't even know what beef gelatin is OR where to get it! Nor have I ever heard of "unfortified nutritional yeast."- the book does not list nutritional value and many of the recipes call for high in fat ingredients like coconut milk, coconut oil and ghee. (You'd think they would add flavor but somehow they don't!) I know coconut oil was advertised as good for you, but that was MARKETING done right (for the coconut industry, not you). The nutritional and other miraculous claims are not fact. Do this Google Search: "is coconut oil bad for you". Read the NY Times article that quotes a HARVARD professor saying it is like poison to your body.- there aren't that many recipes that sound good to me. Who wants spinach in their banana or peanut butter muffins (made from alternative flours with dairy free chocolate chips)? Not me.- the main dishes I made in an Instant Pot were not good (disclaimer: that is all I've made, I have not tried the salads or desserts). At best the dishes I tried were BORING and at worst they were BORING and SLIMY. It is boring because she doesn't put many different seasonings into one dish; it is mostly salt, pepper, red pepper flakes, a LOT of onion and garlic. I'm southern and we like Flavor. Quinoa is in way too many recipes and quinoa in an instant pot is disgusting for the most part. It is what makes the dish slimy.I have returned the book.
So, I feel bad writing this review. The author is truly worked hard on this book. Lovely photos. Nicely laid out. Here is my problem. I read a magazine article where she was featured and I thought all of her recipes were made in the Instant Pot. I have an Instant Pot and really was excited to see healthy weight loss recipes for it. Instead, the book had a great mixture of different cooking sources (baking in oven, cooking in a skillet, etc.). For the average purchaser, that fact would be great; but I just had it in my mind that it was all Instant Pot recipes. Her diet really is the Mediterranean diet with low gluten-free carbs. If you have anyone in your family that has a nut allergy or coconut allergy, this book isn't for you. She uses almond flour (with no substitute) for almost everything that is carb-based. I'm glad this eating lifestyle worked well for her and I celebrate her success. My dissatisfaction isn't because the author didn't do her job; I just had a different perception of what it would be. This book may be perfect for you.
Absolutely love these simple recipes! My boyfriend and I have very different taste preferences and we both love 90% of the recipes we have tried from Brittany so far. To the one star review that say I’m not sure how she thinks she’s qualified... well when you lose 125 pounds and keep it off , that’s enough certification I need to believe something works. I don’t think 1 star is valid especially when you go on to say I agree with some of what she does, which is really her entire point-eat real food. I’ve lost 7 pounds doing this in 3 weeks, I don’t feel hungry, I don’t have to count things, it’s the only thing that has worked. And I’ve gone off track several times (we’ve been on it for 5 weeks but fell off for almost 2 weeks in total) and I don’t add back on the weight as soon as I stop like every other “dietâ€. My boyfriend and I have lost 19 pounds together by following her recipes, we don’t excersize currently and we don’t take supplements. Baby steps. Thank you for An amazing cook book.
What I love most about this cookbook: So many things! 1) Large print and the recipes are easy to follow. 2) Tips to transition to healthy eating. 3) Simple healthy ingredients. 4) The meals are quick and easy to make. 5) There is a 30 day meal plan. 6) I’m no longer afraid to use my Instant Pot! She explains things so well in the recipes. Finally, Brittany’s story of wanting to change, feel healthier and lose weight in a sustainable way really works!
Today is official release day & my copy JUST got delivered. Never in a million years, did I think I’d be excited about buying a “cookbook.â€This isn’t JUST a cookbook. It’s a new way of living your best life, through eating healthier foods. I’ve been a follower of Brittany, for nearly a year; let me just say, SHE is the reason I decided to eat better and also took the plunge and purchased an Instant Pot. Let me tell you, that was THE BEST PURCHASE I have ever made! Even my mother bought one after I told her how it made me love cooking.Through Brittany’s inspiring story & simple recipes that will make you drool (wait until you see the pictures), I have been able to start my “new†life of eating right. JERF. 🥕The cookbook is broken down into easy to find sections with many pictures of the actual dish you’ll be making. I absolutely LOVE the section with detailed descriptions of ingredients and how they help you benefit from using them. She also has described the bad additives, such as GMOs and even dye #s.I am truly grateful that Brittany, put her heart & soul into this great book!
